Trini Hot Mouth

Trini Hot Mouth- Is all about Pepper Sauce/Hot Sauce. A 'Trini to De Bone', and after living and traveling through the islands, I consider myself a true Caribbean girl. After moving to Berlin and all my sacred stores of pepper sauces were depleted, the search for a decent pepper sauce was null and void. Raw, hot peppers were scarce, expensive and not of good quality/heat. At the moment Trini Hot Mouth is in Survey stage. The peppers in the Trini Hot Mouth (THM) Hot Sauce/Pepper Sauce is home grown.. literally. The sauces are presently handmade with fresh ingredients without any unnatural preservertives or sugar. The Pepper sauce is Hot and Flavourful with natural citric notes from the Habenaro and of course lime. Trini Hot Mouth Pepper sauce accompanies any and every savoury meal or snack even pretzles.

Picked Peppers

Hot Harvest

120 picked peppers, weighing in at 903 grams!

Having a little creative fun

The peppers are naturally not uniformed in size and shape but so beautiful. It’s
a dangerous time to be at my apartment, as I make everyone take a raw taste test.

Let’s make pepper sauce

Bottles Arrived!

Bottles arrived

Time to unbox. The bottles have arrived safely!

Different sizes

I am sure as time progresses I will find the perfect set of bottles. I love all
swing top bottles.

40ml - sample size

100ml - swing top

200ml - swing top

275ml - screw top

450ml - swing top

Sterilized!

All bottles are first pre-washed in the dishwasher or in hot soapy water. Then
boiled in distilled water, then hot pepper sauce is immediately added.

Habanero's Ripening

It’s a jungle!

It’s like a jungle in the apartment right now! The peppers are ripening and
this will be the biggest batch of the summer.

Origin

I planted these peppers at the end of summer 2013, and they have grown well.
They are mostly Habanero which I find to be a fantastic variety for making
hot sauce.

Heat Factor

Most habaneros rate 200,000 to 300,000 Scoville heat units but I believe mine
are hotter!

Check out the Wikipedia article about the Habanero for more info.

Random Fact

The etymology of “ripe” says:

Old English ripe “ready for reaping, fit for eating, mature,”

Told you it was a Jungle!

I am looking forward to harvesting these hot babies in a couple of weeks.
